Preserving Apricots

My family has an apricot tree in their backyard and it has been such a blessing over the years. Apricots from the store are overpriced and pretty much tasteless. The thing with apricots is when they ripen they all tend to ripen in a span of a few short weeks. We could never seem to eat enough and so this year Melinda and I spent a few hours preserving some of the fruit.

We did a lot of cutting, chopping and dicing. In fact, our fingernails had an orange hue for the next 24 hours. 🙂

Whole Apricots

So when all was said and done, we had:

4 bags of mixed fruit (including apricots!) for smoothies
1 bag of apricot cookie dough
1 batch apricot/berry crumble
3 jars apricot pie filling
12 jars whole apricots
11 jars apricot jam

Even with all of those apricots preserved, there are still quite a few apricots left on the tree. Any ideas on what to do with it all? 🙂
