In Which we Conquer an Ice Cream Pie…and a Pile of Dishes

Birthdays are fun days of celebration for our family. There are special little traditions throughout the day that make the special person feel…special. πŸ™‚

One of our traditions is the birthday person gets to pick his favorite dinner…and this is what Dad picked for his birthday.


We made this the easy way…we bought the Lawry’s seasoning packets. (By the way, if anyone has a good recipe for homemade fajita seasoning I would be very interested in trying it out!)


Mexican Rice and Refried Beans

And, unfortunately, I forgot to snap a picture. 😦 But it was good! πŸ™‚ The recipe is one given to us by a good friend…who happens to be Mexican. πŸ™‚

As for the beans…we just opened a can of refried beans. πŸ™‚ Heat them on the stove top with a little bit of water and salsa mixed in to soften it up. πŸ™‚

Mexican Salad

This recipe is from my wonderful sister-in-law. πŸ™‚ According to her, you can make this however you like…throwing in whatever you have in the kitchen.

Sour Cream mixed with Salsa (for the dressing)
Chopped Romaine
Crushed Sun Chips
Chopped Tomatoes
Chopped Cucumber
Black Beans
SlicedΒ Red Onion

Layered Ice Cream Fruit Pie

And now for our grand finale! πŸ™‚ We had so much fun making this ice cream pie! Dad was very simple in his requests…he wanted something an ice cream pie with fruit. We found a couple of recipes before this, but none of them quite sounded good to him. So when I found this recipe that mixed three different fruit flavors we knew we had found a winner…and we surprised him with this…


And, of course, no birthday feast would be quite the same without the humungous pile of dishes afterward. AND…the dishwasher didn’t (and still doesn’t!) work! πŸ™‚ But that’s ok…with three of us working on it we (relatively!) quickly conquered this pile. πŸ™‚
