Almond Berry Muffins

(We used blueberries in our recipe instead of strawberries.)

Well…we discovered that this recipe is VERY forgiving. As I told Carrie, we made several very amateurish mistakes…like not reading the recipe carefully;;;]].

The recipe called for mixing half a cup of sugar with the other topping ingredients but neither one of us noticed that. Instead we used the entire amount of sugar for the topping ingredients…i.e. 1 cup of honey and 1/2 a cup of sugar. Of course, this left no sugar for the actual muffin. But of course that would make for a very bland muffin so we added an extra half cup of sugar to the muffin batter.

Then we were supposed to add 3/4 cup of buttermilk to the muffins…but one of us (no names mentioned) somehow got some numbers mixed up and put 1 1/2 cups of buttermilk in the muffins!! At this point, you’re almost thinking there is NO way these muffins are going to turn out! With so much extra buttermilk, we decided to add some extra flour to get it up to a good consistency.

So I was a bit skeptical the muffins were going to turn out…but we kept working on them. We popped them in the oven and let them cook.

When we took them out and tasted them, we would both pleasantly surprised as to how yummy they were. Despite the many alterations in the recipe, they turned out great! Carrie even said they rivaled store-bought blueberry muffin mixes…which is a complement. đŸ™‚
