Update on our Cooking

Our party on Sunday night was a lot of fun and the food added a festive flair. After all, it’s not every day you fix a FEAST for a tv show premiere. πŸ™‚ Everything we made was enjoyed and we’re even going to add a couple of them to our list of recipes to make again. πŸ™‚

Β Herbed Deviled Eggs – These deviled eggs were a big hit! The different herbs added gave it a more complex flavor in comparison to “normal” deviled eggs. This recipe is a definite “keeper”! πŸ™‚ Although it should be noted that we changed the recipe around a bit. πŸ™‚ Here’s what we did…

12 hard-boiled eggs
4 tablespoons red onion
4 tablespoons Ranch dressing
4 tablespoons Miracle Whip
2 tablespoons dried parsley
5 teaspoons prepared mustard
dried dill (we didn’t add as much as the recipe called for as dill isn’t a favorite flavor in our family)
salt and pepper to taste

Granola Fudge Clusters – This was mostly a hit. πŸ™‚ Carrie liked these…but Melinda thought there were too many nuts. It should be noted however that we used a granola cereal that nuts so we had more nuts than the recipe actually called for.Β Β 

Chicken Poppers – Everyone liked these little roll ups. However, we decided that this is probably not a recipe we would make again. It took quite a bit of time to make from the flattening to the rolling up to the cooking. To top it off the high fat/grease content keeps this recipe from making it on our “favorites” list. However we did make some changes so this is what we did…

3 pounds boneless skinless chicken thighs
1 cup fully ground sage sausage
shredded cheddar cheese
2-3 tablespoons olive oil
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon pepper

Decadent Brownie Pie – Decadent describes this dessert perfectly! A couple people thought it would be better without the nuts. So if you aren’t a fan of nuts just leave them out! πŸ™‚ We served this dessert with caramel syrup drizzled on top. We almost followed this recipe to the letter…except that we put in 1 cup of walnuts and 1 cup of cashews. πŸ™‚ And we can’t leave this dessert without saying…the ganache was amazing! πŸ™‚

Β Buffalo Chicken Wraps – These were a MAJOR hit! πŸ™‚ The fried chicken was crispy…the sauce was just perfect…all in all this wrap was just plain good. Melinda does want to fiddle around with it a bit and see if she can getΒ the same taste with baked chicken strips. πŸ™‚

2 cups all-purpose flour
2 teaspoons salt
1/2 teaspoon pepper
1 cup milk
4 chicken breasts (cut into strips)
2 cups oil
1/2 cup butter
10 tortillas
shredded lettuce
Ranch dressing

Citrus Iced Tea – If you like sweet tea then this recipe is not for you. However the subtle blend of flavors makes this tea amazing! It tastes better after having time for the flavors to blend. This is definitely something we would like to make again. πŸ™‚

Garden-Fresh Bruschetta – This bruschetta was good, however, it wasn’t outstanding so we probably will not be making this again. If you enjoy the flavor of basil then this just might be the bruschetta recipe for you. πŸ™‚
