Chicken Alfredo Casserole

Alfredo sauce is a real treat in our household. It tends to be a bit more expensive than just normal spaghetti sauce, so I only buy it when it’s on sale for $1 a jar. That doesn’t happen too often. 🙂 But one of my favorite meals to make when I can snag a few cheap jars of alfredo is this Chicken Alfredo Casserole from my mom.

1 pound pasta
1 1/2 – 2 pounds chicken
2 jars alfredo sauce
1/4 cup butter
Misc. seasonings

Cut the chicken into strips. Cook pasta according to the directions on the package. While the pasta is cooking, saute the chicken in a skillet with some oil. (I like to add a few seasonings in with the chicken at this point…whatever sounds good. 🙂 Garlic is a very good choice!) Cook until chicken is no longer pink. Drain pasta. Pour pasta into a 9 x 13 baking dish. Melt the butter in the microwave. Add some seasonings to the butter (again…whatever sounds good…garlic, salt, pepper, oregano, basil) and pour over the pasta. Give it a gentle stir to mix it in. Add the chicken on top of the pasta. Pour the alfredo sauce over the casserole and bake at 350 for 30 minutes. Enjoy! 🙂
