Restaurant Burritos

img_92331

I tried a variation of this recipe a while back and while it wasn’t horrible, it didn’t strick either one of us as really good. We both agreed it needed some modification. So I recently tried my idea again and came up with a great meal! We both thought it was really good and it reminded me of a Mexican restaurant down the street from where I grew up. So I will definitely be making this recipe again!

8 flour tortillas
1 can refried beans
1 pound ground beef (seasoned with taco seasoning)
1 cup of rice (cooked in chicken broth)
cheese
1 large can green chile enchilada sauce

Spread some beans, meat, rice and cheese in a tortilla, roll it up and lay it in a 9×13 pan. When all of the burritos have been made, sprinkle some cheese on top of the tortillas. Pour the enchilada sauce over the burritos. Bake at 350 for 30 minutes.
